Restaurant hood suppression system requirements

Short answer

A commercial kitchen hood suppression system must be inspected by a trained service company every six months, with the fusible links replaced at each inspection and a new dated tag fitted. The system must be UL 300 wet chemical — dry chemical systems are no longer compliant — and the kitchen also needs a Class K extinguisher within 30 feet of the cooking appliances.

The six-month inspection

NFPA 96 and NFPA 17A require a pre-engineered kitchen suppression system to be inspected twice a year. Chicago enforces it, and the certification tag showing the last inspection date is what a fire inspector, a health inspector and your insurer will each ask for.

UL 300: why dry chemical systems had to go

Commercial kitchens moved to vegetable-based cooking oils, which burn considerably hotter than the animal fats they replaced and hold their heat long enough to reignite after a dry chemical discharge. The old systems could knock the flame down and then watch it come straight back.

UL 300 is the standard the industry adopted in response, and it requires a wet chemical agent that both smothers the fire and cools the oil below its reignition temperature. If your kitchen still runs a dry chemical hood system it is not compliant, and most insurers now treat the upgrade as a condition of cover.

Upgrading is a real job — cylinders, agent, nozzles and detection all change. It is much better planned against a quiet week than forced by a policy renewal.

Changing the cooking line changes the system

A pre-engineered system is designed around a specific appliance layout: this nozzle over that fryer, that one over the char-broiler, each at a set height and angle. Move an appliance, swap a range for a flat-top, or add a fryer at the end of the line and the nozzles are aimed at the wrong equipment.

The system still fires. It discharges into empty air over an appliance that is no longer there, and leaves the one that is burning uncovered. Any change to the line means the system must be re-engineered to the new layout — and this is the single most common reason a Chicago kitchen fails inspection.

It also catches new tenants. Taking over an existing restaurant means inheriting a system engineered around the last operator's menu. Get it surveyed before you open.

The Class K extinguisher is a separate requirement

The hood system handles the fire automatically. The Class K wet chemical extinguisher is for the person dealing with what is left afterwards, and it must be within 30 feet of the cooking appliances. There must also be a sign at the pull station instructing staff to activate the system before using the extinguisher.

A kitchen with a compliant hood system and no Class K unit will still be written up. The two are not alternatives.

Suppression is not the same as cleaning

Grease cleaning inside the hood, plenum and duct is a separate trade under NFPA 96 with its own licensing and its own frequency, which varies with cooking volume. Suppression system inspection is fixed at six months regardless of how much you cook.

Book the cleaner first and the suppression inspection afterwards. Cleaning is one of the most common ways for a nozzle to be knocked out of alignment or a fusible link disturbed, and the inspection is what catches it.

What to do if the system discharges

Stop cooking. The cylinder is empty, the fusible links have gone, and the kitchen has no automatic protection at all until it is recharged and recertified — cooking in that state is both a code violation and a genuine risk.

Call for a recharge, get the links and nozzles replaced, and keep the paperwork. Your insurer will want the recertification date, and so will the inspector on the next visit.

Does the hood system inspection include cleaning the ductwork?

No. Grease cleaning is a separate licensed trade with its own schedule under NFPA 96. The suppression inspection covers the system — cylinder, nozzles, links, detection and shut-offs. Schedule your cleaner before the inspection, since cleaning frequently disturbs nozzles and links.
