Restaurant kitchen fire suppression systems in Chicago

A commercial kitchen fire starts in a fryer or on a range and is inside the duct within seconds. The suppression system in the hood is the only thing standing between that and the rest of the building — and it is the single most heavily inspected piece of equipment in a Chicago restaurant. We inspect, service and certify pre-engineered kitchen systems on the six-month cycle the code requires.

The six-month inspection, and what it involves

NFPA 96 and NFPA 17A require a pre-engineered kitchen suppression system to be inspected by a trained person every six months. Chicago enforces it, and a certificate showing the last inspection date is what a fire inspector, a health inspector and your insurer will each ask to see.

Changed your kitchen line? The system may no longer be legal

This is the failure we find most often, and it is almost always accidental. A pre-engineered system is designed around a specific layout — this nozzle over that fryer, that one over the char-broiler. Move an appliance, swap a six-burner range for a flat-top, or add a fryer at the end of the line, and the nozzles are now aimed at the wrong things.

The system will still fire. It will discharge into empty air over an appliance that has been moved, and leave the one that is burning uncovered. Any change to the cooking line means the system has to be re-engineered around the new layout — tell us when you are planning a change, not after the inspector has been.

UL 300 — the upgrade that catches older kitchens

Kitchens changed to vegetable-based cooking oils that burn much hotter than the animal fats they replaced, and the old dry chemical systems could not reliably put those fires out or stop them reigniting. UL 300 is the standard the industry moved to in response, and it requires a wet chemical agent.

If your kitchen still has a dry chemical hood system, it is not compliant, and most insurers will not write the policy. A UL 300 upgrade replaces the agent, cylinders, nozzles and detection — it is a real job, not a service call, and it is far better to plan it than to have a policy renewal blocked by it.

Class K extinguishers and the hood system are both required

The hood system handles the fire automatically. The Class K wet chemical extinguisher on the wall is for the person dealing with what is left afterwards, and it must be within 30 feet of the cooking appliances. A kitchen needs both, and a sign at the pull station telling staff to activate the system before using the extinguisher.

One thing we do not do — hood and duct cleaning

Grease cleaning inside the hood, plenum and duct is a separate trade with its own licensing and its own schedule under NFPA 96, and we do not offer it. We service the suppression system inside the hood. If a cleaner has knocked a nozzle out of alignment or pulled a link during a clean, that is exactly the kind of thing our inspection catches — so it is worth booking the two close together, in that order.

Frequently asked questions

How often does a restaurant hood suppression system need to be inspected?

Every six months, by a trained service company, under NFPA 96 and NFPA 17A. The fusible links are replaced at each of those inspections, and the system gets a new dated certification tag. Chicago inspectors check the tag date, and an out-of-date tag is a straightforward violation.

What is a UL 300 system and do I need one?

UL 300 is the standard for wet chemical kitchen suppression, introduced because modern vegetable cooking oils burn hotter than the old dry chemical systems could handle. If your kitchen has a dry chemical hood system it is not UL 300 compliant, and most insurers now require the upgrade before they will renew.

My hood system discharged — what happens now?

Do not cook until it has been recharged and recertified. The cylinder is empty, the fusible links have gone, and the kitchen has no automatic protection at all. Call us and we will get the system back in service, replace the links and nozzles, and give you the paperwork your insurer will ask for.

I am moving a fryer — does that affect the suppression system?

Yes, and it is the most common reason a kitchen fails inspection. Nozzles are aimed at specific appliances in specific positions. Moving, adding or replacing an appliance means the system has to be re-engineered around the new layout. Tell us before the change and it is a planned visit rather than an emergency.

Do you clean the hood and ductwork as well?

No — grease cleaning is a separate trade with its own licensing, and we do not offer it. We service the suppression system inside the hood. It is worth scheduling your cleaner first and our inspection afterwards, because cleaning is a common way for nozzles and links to get disturbed.
